Ingredients
For the overnight sponge:300g unfed sourdough starter
250g buttermilk (or 250g milk + 1 tablespoon lemon juice or vinegar)
150g whole wheat flour
1 tablespoon brown sugar
For the batter:
1 egg
4 tablespoons melted butter
1 teaspoon baking soda
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
- In a 4 cup measuring cup, mix together all ingredients (starter, buttermilk, whole wheat flour)
- Cover loosely and let sit overnight on your countertop.
- In the morning, add 1 egg to melted butter and stir well.
- Put all remaining ingredients, mix well and then pour right into the batter.
- Whisk the mixture until smooth while the waffle iron heats up.
- Spray or brush hot waffle iron with oil.
- Pour mix onto hot waffle iron.
- If there's no more steam from the waffle iron, your sourdough waffles are done.
